Cooking With Testa’s - Eggs In Tomato Sauce
Ingredients:
1 tbsp of olive oil
1/4 cup of red bell pepper (chopped)
1/4 cup of yellow onion (chopped)
1 cup of Testa’s marinara sauce
2 eggs (separate the egg whites)
salt and pepper (to taste)
freshly chopped herbs (for garnish)
Directions:
Over medium heat, place a small cast skillet pan. Saute together the olive oil, bell peppers, onions, salt, and pepper. Saute for between 8 to 10 minutes.
Pour the marinara sauce over the bell peppers and let it sit on the stove until the sauce is bubbling. Reduce the heat to low.
In the marinara sauce, make two separate indents and pour egg whites into them. Cook for 3 to 4 minutes.
Pour the egg yolks onto the egg whites and season with more salt and pepper.
Cover the eggs again with a lid and cook for another minute and then serve and enjoy.
